BRAND NEW CARROT CAKE BATTER BEXFAST POT!!!
Inspired by one of my all time favourite desserts – carrot cake. This was the very first flavour of Bexfast Pot I ever made but the original recipe didn’t last long enough in the fridge so I have reworked it and it is now back and better than ever! Think lightly spiced oats with date chunks and grated carrot, topped with thick coconut cashew frosting and a sprinkle of pumpkin seeds to add some crunch – with no refined sugar, dairy or plastic.
