New year’s day was my 2nd anniversary of being vegan and I’m still loving it!
Plants are just so amazing and despite popular belief, it can actually be really simple (and cheap) to get more of them in your face WITHOUT any boring, untasty meals!!
Honestly, if being vegan meant being boring then I would have jumped ship
a long time ago.. but here we are!

Anyway, let’s get to this delicious, super simple recipe..
Just so you know, I threw this together this morning not really planning to write it up so the measurements were done by eye but you get the idea. Basically,
it was so good I had to share!
Almondy Oats with Spiced Apple
+ Superfood Sprinkles
Oats – about 40-50g
Rude Health Almond Milk
Half an apple chopped into small pieces
Cinnamon – 1/4 teaspoon
Ginger (powdered) – 1/4 teaspoon
Teeny weeny sprinkle of fine sea salt
What I Did:
Cooked the oats on a medium low heat with half Rude Health Almond milk/half water. I use water as well as milk so that it’s not too thick and if you are looking to lose weight then it’s cutting down on the little things every day that will make a difference.
While the oats were cooking I heated up a small non-stick pan and chucked the apple in with the cinnamon, ginger and salt. Mixed it around and let it lightly cook.
Once both were cooked I spooned the oats into my bowl making sure I had at least one-two mouthfuls to check it was ok before it went in and then I arranged the apple on top. Next came the coconut, I use organic which has no sulphur dioxide. Sprinkle, sprinkle. Then cacao nibs and flax seeds for added noms and nutrients.
Then I took pictures and ate it.
